Easter Mini Cheesecakes
Hop into Easter with these adorable and creamy cheesecakes!
Yield: 18
The things you will need are:
Graham cracker crust: ●1 cup of graham cracker crumbs  ● 2 Tbsp sugar ● 2 Tbsp butter 
Cheesecake: ● 3 pkg Cream Cheese ● 3/4 cup sugar ● 1 Tsp vanilla ● 3 eggs 
Decoration Toppings: ● 1 cup plus 2 Tbsp Coconut flakes, toasted ● Approximately 54 speckled 
malted milk eggs ● 18 cupcake liners
Lets put it all together!
- Preheat oven to 325℉
 - Mix graham cracker crumbs, sugar, and butter
 - Pack graham cracker crust into cupcake liners
 - Beat cream cheese, vanilla and remaining sugar with mixer until blended
 - Add eggs, 1 at a time, mixing on low speed after each just until blended
 - Spoon over crusts
 - Bake 25 to 30 min. or until centers are almost set
 - Cool completely. Refrigerate 2 hours
 - Top each cheesecake with coconut and malted milk eggs
