Easter Mini Cheesecakes


Hop into Easter with these adorable and creamy cheesecakes!

Yield: 18

The things you will need are:

Graham cracker crust: 1 cup of graham cracker crumbs  2 Tbsp sugar 2 Tbsp butter 

Cheesecake: 3 pkg Cream Cheese3/4 cup sugar 1 Tsp vanilla 3 eggs 

Decoration Toppings: 1 cup plus 2 Tbsp Coconut flakes, toasted ● Approximately 54 speckled 

malted milk eggs 18 cupcake liners


Lets put it all together!
  1. Preheat oven to 325℉
  2. Mix graham cracker crumbs, sugar, and butter 
  3. Pack graham cracker crust into cupcake liners
  4. Beat cream cheese, vanilla and remaining sugar with mixer until blended
  5. Add eggs, 1 at a time, mixing on low speed after each just until blended
  6. Spoon over crusts
  7. Bake 25 to 30 min. or until centers are almost set
  8. Cool completely. Refrigerate 2 hours
  9. Top each cheesecake with coconut and malted milk eggs
