Saint Patrick's Day Piñata Cupcakes



Don't get pinched this holiday! Show up with these scrumptious cupcakes to you Saint Pattys party.

Yield: 12 cupcakes, approximately

The things you will need are:

For the cake: ●1 1/2 cups all-purpose flour 1 1/4 teaspoons baking powder ● 1/4 teaspoon salt 1 stick of unsalted butter, softened1 cup sugar 2 large eggs, room temperature 2 teaspoons vanilla extract 2/3 cup whole milk, room temperature

Butter cream frosting: ●1 cup of unsalted butter, softened3 cups of powder sugar2-3 tablespoons heavy cream1 teaspoon vanilla extract

Lets put it all together!

For the cake:
 1) Preheat the oven to 350℉ and line a 12-cup muffin pan with liners
 2) Whisk the flour, baking powder, and salt in a bowl
 3) Beat the butter and sugar in a stand mixer, until fluffy or about 4 minutes
 4) Beat in eggs, one at a time
 5) Beat in vanilla
 6) Reduce the mixer speed to medium low; beat in half of flour mixture
 7) Mix in milk
 8) Beat in remaining flour
 9) Divide the batter among the muffin cups
10) Bake for about 18 to 20 minutes
11) Cool for 5 minutes before icing  

For the icing:
1) Beat the butter until smooth
2) Add in powder sugar and heavy cream
3) Beat for 1-2 minutes
4) Beat vanilla  

The Piñata aspect of this cupcake is fairly easy to accomplish. All you have to do is take the bigger end of a piping tool and stick inside the top of the cake. These cupcakes had golden pearls inside. To decorate the cupcakes using airhead extremes to resemble rainbows and marshmallows to be clouds.
